- Pita Bread: Pita bread is a soft, round, and slightly chewy flatbread that originates from the Middle East and Mediterranean regions. It’s known for its signature pocket, which forms when the dough puffs up during baking, which is why it’s often used for stuffing with fillings like falafel, shawarma, hummus, and fresh veggies. However, in this recipe, we are making personal size pizzas. I like to use a whole wheat variety but you can pick your favorite pita bread.
- Veggies: I have really kept it simple here using just diced onion, spinach and tomatoes. However, this recipe is open to all whims and creative ideas.
- Marinara Sauce: You have all of the options here. This recipe is really meant to be a quick fix dinner, so I typically use jarred marinara in this instance. You can make your own or choose your favorite store-bought brand.
- Toppings: For this pizza, I used vegan Violife Mozzarella Shreds. Of course, you can use any type of cheese, dairy or non-dairy, or leave the cheese off altogether. I also highly, highly recommend a drizzle of Bertoli’s Balsamic Glaze. I can’t get enough of that stuff.

Veggie Pita Pizzas

4 pieces of whole wheat pita bread
1 1/2 cups marinara sauce
1/2 cup chopped yellow onion
2 cups spinach, chopped
4 Roma tomatoes, sliced
2 tsp olive oil
Salt and pepper to taste
Optional toppings: Balsamic glaze and feta cheese or feta-free cheese
Directions
- Preheat the oven to 350 degrees. Place the pita rounds on a baking sheet and bake for 5 minutes. Remove and allow to cool slightly.
- While the pitas are pre-cooking, heat a skillet on the stove with olive oil. Sauté the onions and spinach until the onions are slightly browned and the spinach is wilted. Turn off the heat.
- Warm the marinara in a saucepan, about 5 minutes.
- Divide the marinara onto each of the four pitas. Top with the onion and spinach mixture. Layer the sliced tomatoes on top and sprinkle with salt and pepper. If you are using cheese, you can add it now.
- Return the baking sheets with the pita pizzas to the oven for an additional seven minutes.
- Remove the pizzas from the oven. Top with Balsamic Glaze if using, and cut into halves or fourths. Serve with a side of salad or veggies.
