- Marinade:
1/2 cup balsamic vinegar
3 tbsp soy sauce (or sub coconut aminos or Braggs Liquid Aminos )
1 tbsp maple syrup (or sub agave syrup or honey) - Spicy aioli:
2 tbsp (vegan) mayo
2 tsp sriracha

- Remove the gills from the underside of the mushrooms if desired. Cut 4-5 superficial slits in the underside to the mushrooms to allow the marinade to penetrate.
- Place the mushrooms in a large zip-top bag and add the balsamic marinade. Seal the bag and gently toss around a bit, then let marinate for 20-30 minutes to overnight, tossing every now and then.
- Preheat the oven to 400 degrees. Sprinkle mushrooms with salt and pepper and place them in an oven-safe dish. Cook mushrooms for 20-25 minutes.
